At Frankie’s East Side Gourmet Pizza in Farmingdale on Long Island, Romano introduced his Vegan menu exclusively to Digital Journal. It is comprised of a Vegan appetizer (drum sticks), Vegan Pizza (with such toppings as mushroom, broccoli, hot pepper, garlic, spinach, pepper and onion), Vegan Drunken Grandma with coconut or almond milk, as well as Vegan Pasta (Penne Alla Vodka) and Vegan Ravioli.
When asked what inspired him to introduce a Vegan cuisine in his Italian restaurant, he said “A large amount of people asked me to do a Vegan menu, and it started snowballing. We started very simple and we started growing.”
Romano revealed that the most popular Vegan item on the menu is the Ravioli, the Vegan lasagna and the chicken Parmesan, where the chicken meat is made from soy. “That’s their version of meat. Soy is plant based,” he said.
Digital transformation of pizzeria
On the impact of technology in the pizzeria business, Romano said, “I love it! If you don’t go with change, this business can die quick. You have to accommodate to every customer you can possibly can, to keep them satisfied.”
“Technology has saved my business,” Romano admitted. “Customers can order on various online, such as Grubhub and Uber, and it’s a continuous thing. Also, each day, more and more people are going Vegan.”
