(New York) – Grand Central Terminal’s comeback as a great place to go for a
bite to eat was furthered with the opening of the hot new restaurant
Metrazur. This American-style brasserie is becoming an in place for Sunday
brunch, thanks in part to its fabulous fritatta, which you can whip up right
at home as a perfect Mother’s Day dish.
INGREDIENTS
12 large eggs
1 cup cream
1 cup diced, blanched potatoes
1/2 cup diced chorizo
1/4 cup scallions
1/4 cup diced tomatoes
salt & pepper
1/4 cup grated Parmesan cheese

METHOD
Preheat oven broiler. Crack eggs and whisk together with the cream.
Lightly saut? the chorizo and drain the excess fat. Add the potatoes
scallions and tomatoes. Immediately add the egg mixture and swirl together
all the ingredients with the spatula to incorporate well. When the eggs
begin to set and solidify, sprinkle with the Parmesan cheese and place under
broiler until golden brown. Carefully slide out of the pan and slice into
sections. Serve with a small salad or by itself. Serves 6.
