A waitress named Zhang Yen responded to a customer complaining about roaches in his salad by popping it in her mouth and eating it. The diner reportedly had asked her if she would eat the bug and Yen immediately did.
Cockroaches are quite edible if prepared properly. Some studies have even made a case for roaches being somewhat cleaner than humans. At the same time diners would be well advised not to chow down on them due to possible disease risks. As someone who has health problems related to this I would know.
Chinese cuisine is coming under intense scrutiny in the media for traditional practices and questions about sanitation. Horrific problems with the system are extremely well documented. We have literally hundreds of examples through the media and due to investigations.
This has of course not stopped food giants in China from buying interests in the United States. China already shares their unhealthy practices with the rest of the developed world and public outcry comes only from a small number of people in places like Australia.
This is because for many countries that import large amounts of food and other products this is the elephant in the room. Everyone knows about this problem but since they are the "world's largest goods trader" China is rarely even threatened with sanctions. Until countries take real action Chinese businesses will just continue spreading contaminated food through the world.
