So here goes, it is also called Aloo Tikki burger, Aloo is potato, Tikki is like patty.

Ingredients:
(quantity varies and is relative according to how many you want to make)

Boiled potatoes
chopped onions
finely cut green beans
finely cut carrot
green peas(optional)
1/2 tsp Turmeric (for an indian touch, optional)
a sprinkle of red chilli powder or a green chilli chopped up( only if you can handle spice)
salt to taste
2 tbsp olive oil for frying

Method

1. boil the potatoes, peel and leave aside.

2. separately boil the carrots, beans and peas, if you like them crunchy, you know when to stop.

3. in a pan, saute the onions to a light brown, mash up the potatoes in large bowl and add the onions, carrots, beans and peas to the mixture.

4. add the turmeric, salt, and chilli powder and with your hands, work the mixture like you would a dough.

5. One you are ready to fry the tikkis, use the potato mash to make flat circles the size of your burger bun.

6. Heat some oil on a non-stick frying pan, use olive oil to be healthier. Once the oil is hot, place the tikkis on it. Cook till brown on both sides, keep turning them over to check if both sides are cooking right.

7. serve either in a burger combining it with a slice of tomato,a ring of onion and ketchup, or serve it as a snack with green chutney.

Green Chutney recipe

Plain Curd(unsweetened yoghurt)
Mint leaves
1 green chilli chopped
a garlic clover chopped fine
salt to taste

Method

1. Hang the curd up in a muslin cloth for half an hour until most of the water is drained.

2. Grind the mint leaves into a paste and add this paste into the hung curd in a bowl.

3. Add the garlic, chillies and salt to the the curd and mint mixture and stir well.

4. your chutney is now ready, serve cold with the tikkis, try it on crunchy toast or in sandwichs.

Ooh and its also delicious with nachos or any kind of chips.

You know, I never thought about how we used to fix left-over mashed potatoes. Same thing...basically.

    I used:

    mashed potatoes
    eggs
    bread crumbs
    salt/pepper
    Italian flavored breadcrumbs
    green/chopped peppers

then fried them in a little oil. You could add or delete any of the ingredients per needs.

The eggs in the recipe listed above, is used as a binding agent...to hold the mixture together. I don't eat a lot of eggs otherwise either, don't need the cholesterol! LOL!
