2 Kinds of Potatoes

I love potatoes. In fact, I love all carbs which is my downfall in life, but oh well. I love having potatoes any which way and today I have 2 new recipes for potatoes that are both incredibly delicious.
First on the list are Gorgonzola Mashed Potatoes. Another love of mine: cheese. I got the idea from a friend of mine and just decided not to follow any type of recipe but simply go with what I know and love when it comes to making mashed potatoes.
Ingredients - serves 3-4
6 medium sized red skin potatoes
1 cup of light sour cream
1/3 cup of gorgonzola cheese
1/4 cup chives, chopped
1/4 cup light garlic cream cheese
salt and pepper to taste
Optional: a whole head of garlic - roasted -->doing this next time :-)
Directions
Cut up potatoes into quarters and boil for 20 minutes or until fork tender.
In the meantime, mix the sour cream, gorgonzola and cream cheese together in a bowl until well combined.
Drain potatoes and add the sour cream/cheese mixture and mash away! Add a heck of a lot of salt or not...and pepper and chives and give her a mix.

The next potato dish is a recipe that has been saved in my AR recipe box for months! I had been dying to try it but it's one of those recipes you keep forgetting about or you're missing an ingredient...etc...etc. It is [b]Hot German Potato[/b] salad and it is DELICIOUS. The ingredients struck me as odd but I am learning to trust the odd recipes out there because they usually come out surprising me the most. The sauce in the recipe makes the potatoes taste tangy but sweet and it's just a unique flavour that has definitely secured this dish a spot in the daily dinner making cycle.
Ingredients - serves 3-4
6 medium sized red skin potatoes
4 slices bacon OR approx 55g of pancetta, cut up into small pieces (I used half my package, so that's why you're getting grams.)
1 tablespoon all-purpose flour
2 tablespoons white sugar
1/3 cup water
1/4 cup white wine vinegar
1/2 cup chopped green onions
salt and pepper to taste
Directions
Cut up potatoes into bite size pieces and boil for 20 minutes or until fork tender.
Cut up raw bacon or pancetta into small pieces and cook in a large, deep skillet over medium heat. Set aside on paper towel. Reserve bacon fat.
Add the flour, sugar, water and vinegar to skillet and whisk in reserved bacon fat over medium heat until dressing is thick.
Add bacon, potatoes and green onions to skillet and stir until coated. Cook until heated and season with salt and pepper. Serve warm.
