I was all alone this Saturday in the day while the bf was at work. I don't normally cook lunch, especially when it is just me but I was not feeling the whole sandwich deal. So, I sat in front of my fridge and just stared at it hoping something would jump out at me that would entail little effort and a lot of flavour... :S. Then it just all came together as one of my mom's classic dinners jumped into my head. I had leftover brown rice, 1/2 a can of tomato sauce, 1/4 of an onion and 1/2 of a chourico sausage. My mom always made a chourico and fava bean sauce served over rice that I loved growing up and that was just one of those rustic dishes that belonged to just you and your family. No one else you knew made such a thing. I think that's what I love about it. It's a family dish, even though it is actually a Portuguese stew type dish enjoyed by many Portuguese families - I don't have a lot of Portuguese friends so it feels like it belongs to my family and that's it! I didn't have beans but I would make do without. It didn't taste like my mom's dish but then again, nothing I ever try to replicate of my mom's comes out the same!! Damn that personal touch. However, this did come out with the same goal - a warm comforting meal and it had remnants of my mom's dish which made it all the more comforting.
So please give this simple dish a go and pretend you grew up in a Portuguese home. :)
