Chicken Roll Ups/Rolltinis - You decide.

Looking through my blogs you will see that I like to stuff things into chicken... occasionally I like to roll things into chicken also. For someone who likes to eat a lot of chicken because it's a lean meat...well sometimes you need to get a little crazy and jazz it up beyond a simple marinade.
And sometimes you have too much leftover cheese and prosciutto in your fridge from Thanksgiving (CDN) and you need to use it up. Leftovers my friend, make for great creative recipes.
So here is a classy and jazzy chicken rolltini...I don't know if that's what I am officially calling it but we will use it for now. hehe
Ingredients
2 bonesless skinless chicken breasts, filleted into 4 halves
4 tbsp cream cheese (I used garlic flavoured....but I also used actual garlic in this recipe so you don't have to follow my sick obsession with garlic)
4 pieces of prosciutto
4 tbsp minced garlic ( I warned you)
4 tbsp (approx) pieces of fresh sage
4 tbsp of grated asiago cheese
salt and pepper to taste
Optional: Parmesan for topping

Bechamel Sauce
1 tbsp of butter
1 tbsp of flour
1 cup of milk
toothpicks!
Directions
Spinkle your chicken with salt and pepper.
In order: brush/spread 1 tbsp of cream cheese on the chicken, lay one piece of prosciutto on top, sprinkle 1 tbsp of sage, sprinkle 1 tbsp of garlic, sprinkle 1 tbsp of asiago cheese.

Starting at the smaller/narrow end, rollllll er up. Stick a toothpick through and sit inside a casserole dish.
Repeat 3 more times.
Now heat a small pot to medium heat. Add butter and as it melts, add flour and stir. Now slowly add the milk and keep stirring until it reaches a nice thicker consistency. Add some nutmeg if you like or just some salt... simple and plain tends to do quite well with this recipe.
Pour it all over your chicken and sprinkle some parmesan over top because you love cheese more than life itself.

Oh I was supposed to say, pre-heat the oven...I'm just going to assume you have. 375F.
Bake for 25 minutes with the last couple minutes on broil (unlike me who put it on broil and then went on facebook chat....woooops)

A little brown, but that doesn't hurt anyone...and it definitely did not hurt this recipe - so very very good.
