Baked Mozzarella sticks!

I have made these a few times before and I usually only ever do it to surprise the bf who literally can eat 20 of these in one sitting. On our road trip last year to Miami he must have had mozzarella sticks everyday...sometimes twice a day. The US is far more plentiful with cheese sticks than O' Canada, so he took good advantage of that.
Anywho, I baked them because I have yet to deep fry anything and will likely start a fire...also baked is healthier! This time I used panko bread crumbs which was a nice addition...the hard part is having the cheese get to the melt point without spewing outside the breading...and because I am not deep frying, it takes longer to crisp the outside...oh the woes of baked mozzarella sticks.
ANYWHO (again), here's a simple recipe for a tasty snack. Warning: a little time consuming for a snack, but when you care about someone, you take the time and effort to surprise them with a treat...and then you hold it over their head in the future when you want something...what? Did I say that out loud? Oh well.
Baked Mozzarella Sticks
Ingredients (this is sooo an've been warned)
6 ounces of fresh mozzarella, cut into 1/2" thick sticks about 2 inches long (this should produce about 15 to 20ish depending on the size)
1/4 cup flour
1/4 cup panko bread crumbs
1/4 cup bread crumbs
2 egg whites (or I used one egg and one egg white)
1 tbsp Italian seasoning
1 tbsp garlic powder
1/4 tsp salt
1/4 tsp pepper
Put the flour in one small bowl and then the egg mix in another bowl, and finally the breadcrumb/panko, Italian seasoning, garlic powder, salt and pepper into another bowl (in that order).

Dip each cheese stick into the flour, coat well, and then dip (using a different hand) into the egg mix and then into the crumb mixture (back to the dry hand) and REPEAT! It's very important to repeat this step to get a good thick coating.
Place the sticks in the fridge or freezer for up to an hour to have them set/harden.

Preheat oven to 400F.
Cook the cheese sticks for about 8-10 minutes and keep a close eye on soon as you see some cheese start to leak out...they're done!

Serve with marinara sauce or salsa or whatever your heart desires.
The bf was very surprised and pleased....and then he took a nap after eating about 20 of them.
