~*~Panko & Pecan Buttermilk Chicken~*~

I finally got my hands on panko breadcrumbs and they are worth the $$. They are in a whole other playing field when it comes to breadcrumbs - they truly create a crunchy texture, even when baked! Which is what most of us healthy eaters sacrifice when breading anything...we end up with soggy breading or just mush because we refuse to fry our foods...but fear not, there is hope for us yet!
I got this recipe from my lovely cookbook: 5 Ingredient Fix. I love her show and her recipes because they are simple yet quite tasty. This recipe was a success at my house. The bf gobbled up all his chicken before finishing his pasta....this is a first at my house. He is starch-obsessed, so this was the sign of a very successful chicken recipe. It's not all because of the panko though...or the pecans but the buttermilk that ensured a moist and tender chicken dish. All 3 of these ingredients really made it what it was....which was GOOD.
Here's the recipe with tinnnny modifications. Yes I added garlic powder. Shut it.
Ingredients
2 chicken breasts - butterflied or cut into tenders
1 cup of panko breadcrumbs
1/3 cup of crushed pecans (original recipe is a full cup but that's just too fattening for me)
1/2 tbsp of garlic powder
1 1/2 cups of buttermilk
salt and pepper to taste
Directions
Marinate chicken in buttermilk for 4 - 6 hours.

Preheat oven to 375F and line a baking sheet with aluminum foil. Spray it with oil.
Mix the panko, pecans, garlic powder, salt and pepper in a bowl.

Dip each piece of chicken into the breading mixture, making sure it's well coated.

Place each piece on the baking sheet and cook for 20 minutes with a last couple of minutes on broil. (I'd go a bit longer if you used full breasts, not butterflied because of their thickness)
