What a name eh? You'd think this chicken recipe would be screaming with spiciness but do not be afraid. It's got just the right amount of spice and sass. Yes, I said sass. When I first read the ingredients I made this face--> :-\ That's my I'm not too sure about this mix of ingredients face, BUT as we should all know by now it's the doubtful recipes that end up surprising us.
If you're feeling sassy yourself, then give this recipe a try. :)
Chicken Diablo
Serves 4 (original recipe is for 8 people, but I doubled up on the sauce)
1/2 cup Frank's Red Hot Sauce
1 cup reduced fat sour cream
1/2 cup ketchup
1/4 cup honey
1/2 teaspoon paprika
1/2 teaspoon cumin
1 tsp of garlic powder
2 tbsp of olive oil
4 skinless, boneless chicken breast halves (and we added 2 thighs just for the hell of it)
3 cloves garlic, finely diced
1/2 an onion, finely diced
2 stalks of green onions, finely diced
Mix the hot sauce, sour cream, ketchup, honey, paprika, cumin, & garlic powder in a bowl.

Use half to marinate the chicken for 2-4 hours. Reserve the rest to use later.

Set a large skillet to medium heat. Add oil, onions and garlic and let cook until they soften. Add chicken and brown on both sides. Each side takes about 5-10 minutes depending on thickness.

Serve on a platter. Heat remaining sauce and pour over top and sprinkle with green onions.

Serve with rice because the sauce tastes fantastic with it.
