Desserts come in all different shapes and sizes but baking cupcakes inside of real eggshells is a very unique way to bake.
Cupcakes are becoming a fun new alternative to traditional cakes for every occasion. In April of 2007 Delicious Days blog posted a unique and cute recipe for eggshell cupcakes. These were made as a replacement for a dessert cake for Easter. They are made by hollowing out eggshells and removing the egg whites and yokes.
After you chose your cupcake flavor and make your batter using a piping bag you can fill your eggshells 3/4 of the way full and placing them in a foil lined cupcake or muffin tin. The foil will help keep the shells from moving around and upright. As with making traditional cupcakes the bake time will be the same.
For a more "real" egg cupcake, Stef from Cupcake Project came up with a "yoke" filling. The filling is made of cream cheese, egg and sugar. Filling the eggshell 1/4 of the way with the cupcake batter, then adding a dob of the "yoke," followed by more batter, you can get a hard boiled egg look. By dying your eggshells with food coloring or Easter egg dye, these make a wonderful alternative to traditional Easter eggs.
These fun eggshell cupcakes are not just for Easter events. Eggs are the perfect shape for making miniature footballs for sporting events and NFL game nights. By using a chocolate cupcake recipe and dying your egg brown with lines to make it look like a football, you can create a personal sized dessert for the big game. You may also want to try making the footballs with your teams colors for that extra flare.
