No More Tears: Genetically Altered Onions

One of the drawbacks of using onions in food preparation has always been the tear-inducing quality of the vegetable for some people. Scientists in New Zealand and Japan may have found a way to change that.
The story posted at Breitbart.com details the work done to genetically alter common onions to eliminate the tear-causing enzymes.

New Zealand researchers used "gene-slicing" techniques to modify the onion's genetic makeup, turning off the gene which causes tears. Japanese researchers had identified the gene in 2002.

The report quotes one researcher's explanation of the process: "We had the ability to insert DNA into onions, using gene-silencing technology developed by Australian scientists. The technology creates a sequence that switches off the tear-inducing gene in the onion so it doesn't produce the enzyme. So when you slice the vegetable, it doesn't produce tears."

The hope is that besides being tear-free, the onions will also have an improved flavor: "We anticipate that the health and flavour profiles will actually be enhanced by what we've done. What we're hoping is that we'll essentially have a lot of the nice, sweet aromas associated with onions without that associated bitter, pungent, tear-producing factor."

The break-through was featured in an article in Onion World, the magazine of onion growers.

It will likely be 10 to 15 years before tearless onions are available for consumer use.

    I wear contact lens, whenever I cut onions I have no problems whereas my friends always have problems :) I think the onions have this for a reason, unless we study this carefully there is no need to alter it. Nature knows far better than us. It maybe convenient, but we maybe giving up the healthy aspects of it.

    I have to agree with you. Onions make tears for a reason and it could be that touching you're eyes while handling an onion might cause some eye damage, hence tears may be a warning and tell the handler just how close or far one should be from handling onions. Also, onions tastes perfectly fine and do not need any improvements. Genetic alterations? That's something to get teary about.

    onions have almost never had a teary effect on me. my tollerance to the sulfer must be relatively high, i suppose...i can count on one hand the number of times i've actually teared up, and i use onions several times a week...my wife, on the other hand, seems to tear up easily...

    It is certainly interesting and potentially important research. The tearing part is very annoying for me. However, I'd gladly suffer through liters of tears and pain in order to have a tasty onion. I think that "wait and see" is the way to go here.

    Some onions make me tear up but others don't. I noticed too that being with/without my glasses makes a difference too! Yep...better to wait and see on this.

    well, wait and see is the only real option, unless you know one of these gene-slicers personally... :-)
